Zaldy Ramos Jr. – From Cookery to Baking

 

I am Zaldy Ramos Jr. from Pangasinan. I am a trainer of cookery by profession.

But I started baking because one time there was a need for someone to teach bread and pastry at the school where I work. Honestly, I doubted myself para magturo mag bake because back in college, pahapyaw lang ang baking lesson namin. At the same time, di ko rin talaga siya nabigyan ng time para pagaralan ng husto o i-master.

Anyway, I had no choice but to teach kung ano man ang konting alam ko, dun ko hinugot yung itututo ko. Medyo may mga trial and error at nag experiment ako to get a near-perfect output para di mapahiya dahil nabansagan akong trainer.

It was only at the start of 2018 na nai-focus ko yung sarili ko sa pag-bake, although meron pa rin mga experiment, nakagawa rin naman ng maayos na output.

Malaking inspiration ang mga customers (yung mga taga tikim hehehe). Syempre pag nagustuhan nila, masaya ka inside and out dahil bukod sa nakagawa ka ng magandang output, nagustuhan nila pati ung timpla.

Nakakapag-bake ako ngayon pag gusto lang, o kapag may tuturuan. Mas maganda kasi kung magbe-bake ka yung talagang gusto mong gawin at hindi dahil sa napilitan ka lang. Magkakaron ng di magandang kalalabasan yung ginagawa mo.

Pagdating sa recipes, ako na mismo ang nagdadagdag at nagbabawas ng mga ingredients pero may guide pa rin syempre sa mga books. Pero pag alam mo sa sarili mo na kulang, dadagdagan mo ng ganitong ingredients o ganyan.

Signature ko ang Mango chiffon in creamcheese frosting, at pineapple upside down with maple syrup.

When you bake a product that is loved by your taga-tikim, that makes your baking life worthwhile. Being appreciated and loved for what you have baked is the best!

Most challenging recipes for me are breads, because of the fermentation and ingredients needed, as well as having to adjust to weather, temperature, etc.
