Whole Wheat Fruit Cake

For the cake:

  • 1 pack MAYA Whole Wheat Pancake Mix 400g
  • 1/3 cup canola oil
  • 2 pieces eggs
  • 1 cup water
  • 1 cup glazed fruits

For the syrup:

  • 1/2 cup brandy
  • 1/2 cup sugar
  • 1/4 cup water


  • Preheat oven at 300⁰F. Grease and dust with flour a mini loaf pan
  • In a medium-sized bowl, mix canola oil, eggs and water. Add in pancake mix. Mix well, until there are no lumps. Gently fold in glazed fruits.
  • Pour onto prepared pan. Bake for 15-20 minutes.
  • While the cakes are baking, prepare the brandy syrup.
  • In a sauce pan, mix the sugar and water. Heat until sugar is dissolved. Once simmered remove from the heat then add in brandy.
  • Remove cakes from the oven. While they are still hot, brush the cakes with the prepared syrup.
  • Let the cakes cool. Transfer in an airtight container.
  • Age for a few days and re-brush with the brandy syrup.
