Whole Wheat Fruit Cake

Ingredients
For the cake:
- 1 pack MAYA Whole Wheat Pancake Mix 400g
- 1/3 cup canola oil
- 2 pieces eggs
- 1 cup water
- 1 cup glazed fruits
For the syrup:
- 1/2 cup brandy
- 1/2 cup sugar
- 1/4 cup water
Instructions
- Preheat oven at 300⁰F. Grease and dust with flour a mini loaf pan
- In a medium-sized bowl, mix canola oil, eggs and water. Add in pancake mix. Mix well, until there are no lumps. Gently fold in glazed fruits.
- Pour onto prepared pan. Bake for 15-20 minutes.
- While the cakes are baking, prepare the brandy syrup.
- In a sauce pan, mix the sugar and water. Heat until sugar is dissolved. Once simmered remove from the heat then add in brandy.
- Remove cakes from the oven. While they are still hot, brush the cakes with the prepared syrup.
- Let the cakes cool. Transfer in an airtight container.
- Age for a few days and re-brush with the brandy syrup.
