Preheat oven to 350°Line 4-inch mamon molders with paper cups.
Sift flour, ube powder, baking powder, salt, and sugar together in a bowl. Make a well at the center and add oil, eggyolks water, and flavoring mix until smooth. Set aside.
Beat eggwhites with cream of tartar until soft peaks form. Add sugar gradually and continue beating until stiff but not dry. Fold in eggyolk mixture into the eggwhite mixture until thoroughly blended. Pour onto prepared molders.
Bake for 20-25 minutes or until done. Cool inverted in a wire rack.
Once cooled, brush with butter or margarine, sprinkle with sugar and grated cheese on top.
